This deep-fried kebab highlights the richness of coconut (Nariyal), creaminess of cheese (Malai), and a delightful crunch from nuts, combined with a medley of vegetables. It has an exotic, yet traditional appeal, perfect for a unique starter in rain.
Ingredients:
For Kebabs:
- 1 cup paneer (cottage cheese)
- 1 cup potato , mashed
- 1/4 cup coconut (desiccated or fresh), grated
- 1/2 cup boiled mixed vegetables (peas, cauliflower, beans, carrots), mashed or grated
- 1/4 cup breadcrumbs
- garlic, chopped – 1 tsp
- onion, chopped – 1 tbsp
- ginger, chopped – 1 tsp
- green chili, finely chopped – 1
- garam masala powder – 1/2 tsp
- cumin powder – 1/4 tsp
- coriander powder – 1/4 tsp
- Salt to taste
- fresh coriander, finely chopped – 2 tbsp
- Oil for deep frying
- chaat masala – 1 tsp
For Stuffing:
- processed cheese – 1/2 cup
- roasted peanuts – 1/4 cup
- chili flakes – 1/2 tsp
- coconut powder – 1 tbsp
Method:
1. Prepare the Mixture:
– Heat oil in a pan and crackle cumin seeds.
– Add chopped onion, garlic, ginger, and green chili. Sauté for a few minutes until the onions turn translucent.
– Add turmeric, chili powder, garam masala, cumin powder, and coriander powder. Stir on low flame until the masala starts leaving the edges. Add a little water if needed to prevent burning.
– Add the grated vegetables and paneer. Mix well and cook until fully combined. Add salt to taste and finish with chopped coriander leaves.
– Transfer the mixture to a plate and allow it to cool. Once cooled, mix in coconut powder and breadcrumbs.
2. Prepare the Stuffing:
– In a bowl, combine processed cheese, roasted peanuts, chili flakes, and coconut powder. Mix well to create the stuffing.
3. Shape the Kebabs:
– Take small portions of the cooled mixture and shape them into kebabs.
– Make an indentation in the center of each kebab and fill it with the cheese stuffing.
– Shape the kebabs to seal the stuffing and ensure they hold together.
4. Fry the Kebabs:
– Heat oil in a deep frying pan.
– Carefully drop the shaped kebabs into the hot oil and fry until they turn golden brown.
– Remove and drain excess oil on paper towels.
5. Serve:
– Sprinkle chaat masala on top of the kebabs.
– Serve hot with mint chutney or your preferred dip.
