Dhooska or Dhuska is a famous deep-fried snack eaten all over Jharkhand and globally famous as regional food. Generally, it is eaten for breakfast paired with choices of your vegetable curry or chicken curry.
The main ingredients of the dhooska are rice, chana dal, and white Urad dal. It is soaked overnight and then grinds in the food processor. The batter is then deep-fried. It is considered a full meal because both the rice and legumes are available in it.
My wife belongs to Jharkhand, and this recipe of dooshka she has been trying for long. The same she has learned from her mother. She told me that traditionally only salt and cumin seeds are used in the mixture but In my version of Dhooska, also using hing and carom seeds in the batter. Both these ingredients enhance the taste and give uniqueness to the dish.

Ingredients
- Rice – 1 cup
- Urad dal – 1/2 cup
- Chana dal – 1/4 cup
- Cumin seeds – 1 teaspoon
- Ajwain (carom seeds) – 1/2 teaspoon
- Hing (asafoetida)- a pinch
- Salt – to taste
- Oil – for frying
Method
1. Mix rice and dal. Wash it twice with water and soak overnight.
2. Grind it into a smooth paste with the required amount of water. The batter should not be very runny.
3. Add hing, ajwain, and cumin seeds to it and mix well. Keep it separate for 30 mins to infuse the flavor of spices.
4. Heat oil in a kadhai. Add salt in the batter.
5. When sufficiently hot, pour a ladleful of batter into it carefully.
6. Let it fry in low flame till it turns golden brown from both sides.
7. Remove the excess oil with the help of tissue paper.
8. Transfer to a serving plate.
9. Serve hot with choice of your vegetable curry or chicken curry.
