When we name Kebabs the things that come to mind are various cooked meat dishes. In most countries, a kebab may be the classic shish kebab or shashlik. kebabs are typically cooked on a skewer over a fire, and some kebab dishes are baked in a pan in an oven. But there are also easy vegetarian alternatives. Vegetable Kebab recipes are available for all kebab lovers to practice vegetarianism.
Today I am presenting Hara Bhara kebab. True to its name Hara bhara kabab boosts green health. made from spinach, peas, cheese, and potatoes. It is nutritious as well as delicious and tastes great with mint chutney.
I always love to prepare kebabs and especially hara bhara kebab as it is filled with vegetables as per your choice. It can be pan-fried or shallow fried or grilled in the oven. It is a great snack and party starters and especially to kids who hate to have their veggies.

Ingredients
- Baby spinach – 1 bunch
- Oil – 3 tablespoon
- Green chili (chopped) – 1 teaspoon
- Beans (chopped) – 1/2 cup
- Green Peas – 3/4 cup
- Boiled Potato (grated) – 2 cup
- Cottage cheese (grated) – 3/4 cup
- Coriander leaves (chopped) – 1/4 cup
- Cumin seed – 1/2 teaspoon
- Kashmiri chili powder – 1/2 teaspoon
- Coriander powder – 1/2 teaspoon
- Amchur powder – 1 teaspoon
- Garam masala powder – 1/2 teaspoon
- Turmeric powder – 1/4 tsp
- Besan – 1/2 cup
- Salt – to taste
- Cashew nut (chopped) – 1/3 cup
- Flour – to dust
- Chat Masala – a pinch
Method
- Wash and blanch spinach for 30 seconds. Remove, strain, and allow it cool. Remove the excess water from spinach.
2. In a pan, heat oil, add cumin seed. Crackle it. Add green chilli. Saute.
3. Add beans, and green peas, and spinach. Add salt. Cook till the moisture disappears.
4. Transfer and roughly coarse the mixture in the food processor. Transfer the mixture into a bowl.
5. Heat oil in a pan, saute cashew nut and add the coarse mixture with potato and paneer.
6. Add all the spices and cook it properly. Add besan and mix well. Adjust seasoning.
7. Remove and allow the mixture to cool.
8. Grease the palm and make a round small patties, dust with flour and keep aside.
9. Heat oil in a pan, and shallow fry the patties from both sides.
10. Remove the excess oil from patty with tissue paper.
11. Transfer the Hara bhara kebab on a serving plate. Dust the chat masala.
12. Serve hot with mint chutney.
