Let’s prepare a healthy dessert…..

In this Covid pandemic more of the family is performing work from home. By sitting long hours they are gaining obesity and thus ignoring dessert from their menu.

I am preparing Lauki halwa with jaggery…feeling something exciting!!!! Lets cook…  A recipe which you can easily prepare at home and doesn’t affect your weight.

Lauki/ Bottle gourd/ Doodhi/ Ghia/ Calabash gourd is yellowish-green in colour and has a white pulp, with white seeds embedded in the spongy flesh. It consists of approximately 96% of water and is therefore a great thirst quencher. It also prevents fatigue and keeps the body cool and refreshed during summers.

Jaggery is rich in vitamins, minerals, iron and therefore it is highly recommended for anemic people. It is absorbed slowly compared to sugar, it doesn’t increase blood sugar levels as rapidly as sugar.

Ingredients

  1. lauki / bottle gourd – 500 grams
  2. Desi ghee – 50 ml
  3. Cashew nut (halved) – 10 nos
  4. Almond (halved) – 5 nos
  5. Raisins – 10 nos
  6. Milk – 2 cup
  7. Jaggery – 50 gm  
  8. Cardamom powder – 1/4 teaspoon
  9. Khoya – 50 gm

Method

  1. Peel, wash and grate the lauki.

2. In a pan, heat desi ghee, add cashew nut and almond. Fry till golden color. Remove half of the nuts and keep it separate for garnishing.

3. In the same pan, sauté lauki in the remaining desi ghee. Let the water evaporate from the lauki. Sauté till the lauki shrinks slightly and changes color.

4. Add milk, cardamom powder and raisins (keep half raisins for the garnishing). Stir occasionally. Cook till the lauki fully cooks and milk evaporates.

5. Add khoya. Stir for a few mins. Add jaggery, mix it properly. Remove from the heat.

6. Transfer the halwa in a serving bowl. Garnish with roasted nuts and raisins. Serve hot or chilled.
