Hung Curd
Hung curd is made by draining the whey from curd to get thicker consistency. It can be made very easily at home. Tie some curd in a muslin cloth and leave it hanging for at least 3-4 hours or till all the water drains out. Make sure to refrigerate else the curd will turn sour.
It is very easy to prepare, hung curd and sugar is mixed thoroughly and choice of flavors are added to improve the taste.
It is eaten as side-dish with bread or as dessert. It is often served chilled. Though the food cannot be bound in the borders but it is very famous in Maharashtra and Gujarat.
Shrikhand is made by adding sugar to hung curd, making it a “perfect combo of probiotic bacteria and essential fats.” Probiotics are important for improving digestion and gut health.Eating shrikhand is a treat for anyone who loves Indian sweets – even if you are not much fond of sweet dishes, shrikhand is worth a try!
I have loved mangoes from my childhood. For me, summer is all about mango. In my childhood, during summer days there were no limits for eating mango and Litchi. You can’t believe trees of both were in my courtyard. Still, the big giant Litchi tree is lying there. I can remember that my mother was distributing mango and litchi among the colony fellows. I am preparing Mango shrikhand as a token of remembrance for my childhood friends. I hope they will enjoy it!!!!
