Penne Arrabiata Recipe

Sometimes a simple, spicy pasta recipe is the only thing you want to eat.

Method

  1. Blanch the pasta in boiling water. coat olive oil thoroughly in pasta to prevent sticking together.
  2. Bring a medium pot of water to a boil. Keep the cross incision into the tomatoes and remove the eyes of the tomatoes.
  3. Blanch them for 30 seconds to loosen the skin and immediately shock in ice water; peel off the skin with a paring knife. Chop the tomatoes and remove the seeds.
  4. In a sauce pan , add olive oil, bay leaf and diced onion. Sauté until translucent. Add salt so they release their liquids. This will help to bring out the natural sweetness of the onions.
  5. Add garlic and sauté it.
  6. Add the chopped tomatoes to the garlic and onions.
  7. Add tomato puree. This will give the body and texture to the sauce. Season with salt and black pepper.
  8. Simmer for about 20 minutes until the flavors come together.
  9. In a pan toss the pasta with olive oil, onion and garlic. Add chili flakes and tomato concasse. Season well with salt and pepper.
  10. Transfer the pasta in a serving plate, topped with grated parmesan cheese. Garnish with fresh basil leaves. Serve with toasted garlic bread.
