Vegetable cheese cutlets are a delightful fusion of crispy, golden exterior and a creamy, gooey cheese center. Made from a blend of mashed potatoes, mixed vegetables, and aromatic spices, these cutlets are both nutritious and flavorful. Coated in a crunchy breadcrumb layer and fried to perfection, they offer a satisfying bite with every crunch.

Ingredients
- 2 medium potatoes, boiled and mashed/grated
- 1 cup mixed vegetables (carrots, peas, cauliflower, beans), finely chopped and grated
- 1/2 cup cottage cheese , grated
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/4 cup fresh coriander leaves, chopped
- 1 teaspoon ginger, chopped
- 1 teaspoon garlic, chopped
- 1 teaspoon cumin seed
- curry leave , a few
- 1 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- Salt to taste
- 1/4 cup roasted peanut, crushed
- 1/2 cup grated cheese (cheddar, mozzarella, or a mix)
- 1/2 cup all-purpose flour
- 1 cup bread crumbs
- 1 cup water
- Oil for frying
Instructions
- Crackle cumin seed in oil, add curry leaves, green chilli, onion, ginger and garlic. Saute for a few minutes.
- Add cumin powder, garam masala, red chili powder, salt, and cook the masala till it starts leaving the edges. Add potato and paneer and mix well. Transfer in a bowl and allow the mixture to cool.
- If the mixture feels too soft or sticky, add a little bit of bread crumbs to help bind it together.
- Take a small portion of the mixture and flatten it in your palm.
- Place about a teaspoon of grated cheese in the center.
- Fold the edges over to enclose the cheese and shape it into cutlets. Make sure the cheese is well sealed inside.
- Make a thick slurry with flour and water.
- Roll the cutlet in slurry and coat each cutlet in breadcrumbs
- Heat oil in a frying pan over medium heat.
- Fry the cutlets until they are golden brown and crispy on both sides, about 3-4 minutes per side.
- Place the fried cutlets on a paper towel to drain excess oil.
- Serve the vegetable cheese cutlets hot with ketchup, chutney, or your favorite dipping sauce.
