Vegetable Cheese Cutlet Recipe

Vegetable cheese cutlets are a delightful fusion of crispy, golden exterior and a creamy, gooey cheese center. Made from a blend of mashed potatoes, mixed vegetables, and aromatic spices, these cutlets are both nutritious and flavorful. Coated in a crunchy breadcrumb layer and fried to perfection, they offer a satisfying bite with every crunch. 

These cutlets offer a delicious balance of savory and cheesy goodness, making them a crowd-pleaser at any meal. Ideal as a snack or appetizer, vegetable cheese cutlets are sure to be a hit with both kids and adults alike.

Ingredients

  1. 2 medium potatoes, boiled and mashed/grated
  2. 1 cup mixed vegetables (carrots, peas, cauliflower, beans), finely chopped and grated
  3. 1/2 cup cottage cheese , grated
  4. 1 small onion, finely chopped
  5. 2-3 green chilies, finely chopped 
  6. 1/4 cup fresh coriander leaves, chopped
  7. 1 teaspoon ginger, chopped
  8. 1 teaspoon garlic, chopped
  9. 1 teaspoon cumin seed
  10. curry leave , a few
  11. 1 teaspoon cumin powder
  12. 1/2 teaspoon garam masala
  13. 1/2 teaspoon red chili powder 
  14. Salt to taste
  15. 1/4 cup roasted peanut, crushed
  16. 1/2 cup grated cheese (cheddar, mozzarella, or a mix)
  17. 1/2 cup all-purpose flour 
  18. 1 cup bread crumbs 
  19. 1 cup water 
  20. Oil for frying

Instructions

  1. Crackle cumin seed in oil, add curry leaves, green chilli, onion, ginger and garlic. Saute for a few minutes.
  2. Add cumin powder, garam masala, red chili powder, salt, and cook the masala till it starts leaving the edges. Add potato and paneer and mix well. Transfer in a bowl and allow the mixture to cool.
  3. If the mixture feels too soft or sticky, add a little bit of bread crumbs to help bind it together.
  4. Take a small portion of the mixture and flatten it in your palm.
  5. Place about a teaspoon of grated cheese in the center.
  6.  Fold the edges over to enclose the cheese and shape it into cutlets. Make sure the cheese is well sealed inside.
  7. Make a thick slurry with flour and water. 
  8. Roll  the cutlet in slurry and coat each cutlet in breadcrumbs
  9. Heat oil in a frying pan over medium heat.
  10.  Fry the cutlets until they are golden brown and crispy on both sides, about 3-4 minutes per side.
  11. Place the fried cutlets on a paper towel to drain excess oil.
  12.  Serve the vegetable cheese cutlets hot with ketchup, chutney, or your favorite dipping sauce.
