Ingredients
- Proso millet, soaked overnight – 2 tbsp
- Bell pepper, yellow & red, diced – 1 tbsp
- Extra virgin olive oil – 1 tbsp
- Lemon juice – to taste
- Salt – to taste
- Black pepper, crushed – to taste
- Honey – 2 tsp
- Water melon, diced – 2 tbsp
- Fresh fig, peeled, wedges – 2 tbsp
- Red cabbage, dice – 1/4 cup
- Black olive, sliced – 2 tsp
- Parsley, chopped – 1 tsp
Method
Cook proso millet and allow it to cool.
Make a salad dressing with honey, olive oil, lemon juice, salt and black pepper.
Toss all the ingredients with dressing and mix well.
Transfer in a serving bowl, garnished with olives and chopped parsley..
