Pancakes have a long history, dated back to the times of Romans. Pancakes are found almost in every culture. It is a thin flat cake made from batter and fried in a pan or on a griddle. The batter is usually made from eggs, flour, milk or water, oil, or melted butter.
Pancakes may be served at any time of the day with a variety of toppings or fillings but it is typically considered breakfast food.
Mango is considered as the king of fruits. No wonder its taste, texture, and flesh attract me always. I love mangoes, for me, summer is all about mango. I am preparing Mango pancakes for the kids and those who want to eat it throughout the year, whether it may be any season.
I can remember, in my childhood my maternal uncle always bought me mango fruity to drink, to stop me from crying and I feel this tastes like mangoes. That’s why I have added mango fruity in the batter. I always enjoyed the taste of fruity.

Ingredients
- All-purpose flour ( Maida ) – 1 cup
- Baking powder – a pinch
- Ripe Mango – 1 no
- Egg – 1 no
- Butter (soft) – 1 teaspoon
- Milk (skimmed ) – 1 cup
- Sugar – 1 tablespoon
- Honey – 1 teaspoon
- Icing Sugar – to dust
- Mango fruity – 1/2 cup
Method
- Peel the mango, cut the mango in dice. Keep separate in a bowl.
- Use trimmed mango for grind in a food processor to prepare mango puree.
- Take a bowl. Add soft butter, egg, and sugar. Beat properly.
- Add 1/2 cup milk and whisk.
- Add flour and baking powder. Beat and mix properly.
- Add mango puree and dice mango in a batter.
- To add the flavor and mango fruity in the batter and whisk properly.
- Heat a pan, add butter and pour a ladle of pancake batter.
- As the bubbles start to form on the surface of the pancake from the top side, flip and cook it from another side.
- Transfer the pancake to a serving plate. Garnish with icing sugar.
- Garnish with diced mangoes.
- Serve hot with maple syrup, honey, and fruits.
