Millets and Melon Salad

MILLET AND MELON SALAD

Ingredients

  1. Proso millet, soaked overnight – 2 tbsp
  2. Bell pepper, yellow & red, diced – 1 tbsp
  3. Extra virgin olive oil – 1 tbsp
  4. Lemon juice – to taste
  5. Salt – to taste
  6. Black pepper, crushed – to taste
  7. Honey – 2 tsp
  8. Water melon, diced – 2 tbsp
  9. Fresh fig, peeled, wedges – 2 tbsp
  10. Red cabbage, dice – 1/4 cup
  11. Black olive, sliced – 2 tsp
  12. Parsley, chopped – 1 tsp

Method

  1. Cook proso millet and allow it to cool.

  2. Make a salad dressing with honey, olive oil, lemon juice, salt and black pepper.

  3. Toss all the ingredients with dressing and mix well.

  4. Transfer in a serving bowl, garnished with olives and chopped parsley..
